Scuffins are distinguished by their rich and buttery flavour, reminiscent of scones, but the texture sets them apart. They possess a unique combination of crispness and crumbliness, akin to scones, while also retaining the moist and soft qualities of muffins.

The exterior of scuffins is delicately crisp, displaying a golden brown crust that offers a delightful crunch. Inside, scuffins are typically light and fluffy, with a delicate crumb. To experience their optimal texture, scuffins are often enjoyed warm, straight from the oven.

2 cups (240g) all-purpose flour

1 cup (200g) granulated sugar

1 tbsp baking powder

½ tsp baking soda

¼ tsp salt

½ pint (170g) fresh blueberries, washed and dried

1 cup (170g) white chocolate chips

½ cup (113g) unsalted butter, melted and cooled

¼ cup (71g) plain Greek yogurt

1/4 cup (60ml) milk

2 large eggs

1 tsp vanilla extract

turbinado sugar

Position the oven rack in the middle and preheat the oven to 425 F.

Grease a muffin pan and set it aside. Gather all the required ingredients.

In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add blueberries and white chocolate chips. Gently toss the add-ins with flour using a rubber spatula until they are well distributed.

In another bowl, combine melted and cooled butter, Greek yogurt, milk, eggs, and vanilla extract.

Once the oven is preheated, add the wet ingredients to the dry ingredients. Using a rubber spatula, fold the mixture gently until no streaks of flour are visible. Avoid overmixing the batter.

Working quickly, use a 1/3 cup ice-cream scoop to portion the batter into 9 muffin tins. Sprinkle the tops with turbinado sugar.

Immediately transfer the muffin pan into the hot oven. Bake at 425 F for 10 minutes. Then, without opening the oven door, reduce the oven temperature to 350 F and continue baking for an additional 11 minutes, until the tops turn golden, and a toothpick inserted into the middle of a scuffin comes out clean.

Allow the scuffins to cool in the pan for about 10 minutes. Then, remove them from the pan and transfer them onto a cooling rack.

Serve the scuffins warm with a pat of salted butter. Enjoy.
